Recipe of the Month: Tortellini Primavera … Sorta

 

Hello fellow avid reader friends! BookWormMom here.

Please, please, please don’t tell my great uncle I fed this to my children. He is a retired chef/owner of an Italian restaurant.

But friends … a busy, tired mom needs to do what a busy, tired mom needs to do. That may or may not mean taking time to read a good book. I timed myself. It took me 15 min to pull this together, including getting a pot of water to a boil.

This portion only fed FOUR (4) not so hungry people. I had some of my people at work or out of town. It doubles and triples very well.

 

Tortellini Primavera … Sorta

1 10 oz bag frozen mixed vegetables- thawed
1 19 oz bag frozen cheese tortellini
2-3 Tablespoons extra virgin olive oil
1 cup shredded Italian blend cheese
1/4 tsp kosher salt*
1/4 teaspoon ground black pepper*
1/4 teaspoon granulated garlic*

*I’m a total pinch and dash kind of cook. These are guesses….as in I think I pinch is about 1/4 tsp. I err on the side of caution. You can always add more salt and pepper to taste.

Cook the frozen tortellini according to package directions. The brand I buy boils to done in 2 minutes. Mix everything together in a big bowl. Done.

**If you forget to thaw your frozen veggies earlier in the day, just zap them in the microwave until thawed.
