Recipe of the Month: (September) Monkey Frittata

 

Hello Reader Friends!

This is what happens when a busy mom has a mix of odd ingredients, doesn’t want to grocery shop, and plays with her food. I also had a sweet craving, but I am not supposed to eat refined sugar. We make frittata all the time. In fact, that is the dinner plan tonight because my chickens have been laying well, and we have an abundance of eggs. I decided to play with what I had on hand and make a sweet frittata. Playtime was successful!

Monkey Frittata

2 ripe bananas

1 tsp vanilla extract

¼ tsp ground nutmeg

½ tsp ground cinnamon

¼ cup quick cook oats

1/3 cup honey

Pinch salt

6 whole eggs

Please excuse the fact that lemon extract is in the picture. I didn’t have my reading glasses on when I took the pic. It was supposed to be vanilla extract. That is the nature of eyes getting old. Ha!

Preheat your oven to 350 °F and grease a glass 9×9 baking dish (or whatever dish you want).

  • Mash up your bananas in a big bowl. Some big chunks are fine.
  • Mix in the vanilla, nutmeg, cinnamon, oats, and salt.
  • Mix in the honey.
  • Mix in the eggs.
  • Pour into your glass baking dish and bake at 350°F for about 50 min.

Remember, I have one good hand, so your prep time will be even quicker. This took me about 10 minutes to throw together. I sampled it warm, but I’m guessing it is yummy at room temp, too. Wanna laugh? My huge teen son said, “This is pretty good.”

 

He doesn’t compliment much.
