Recipe of the Month: (November) Spinach Bacon Pasta

Howdy, my Reader Friends!

This is literally three ingredients. Spinach. Bacon. Pasta. There are a few add-ons that are completely optional, but you only need three things.

This is also one of those meals you just keep on hand for nights when all you know what breaks loose, but you still need to feed people.

You can use whatever pasta your heart desires…or, as is often the case in my house, whatever is in your pantry. There are whole grain, veggie, GF, chick-pea, protein, and a dozen other types of pasta out there now. You pick. My people like plain pasta.

Ingredients:

1 pack bacon
1 box pasta
1 10 oz box frozen chopped spinach

  • Cook your bacon however you like. I’m always rushed for time, so my go-to is 5 min in the microwave on a paper towel-lined plate (and one over it). One package generally takes me two plates. Cut it up into bite-sized pieces. Crumbling works, too.
  • Thaw and drain your spinach.
  • Cook your pasta according to package directions.
  • Toss it all together.
  • My good friend from TX puts a cup of raisins in hers. I don’t like raisins, so I don’t.
  • Optional toppings are parmesan cheese and pepper. I don’t need salt. You might, but taste it first. I always serve it with some sort of bread.
