These cookies are so popular with my family that one of my daughters made them for her college buddies. They devoured the cookies in about 15 minutes.
They aren’t sugar-free, but I don’t see where you couldn’t play with sugar substitutes. I just don’t have any on hand.
The mix-ins can vary, too. We use chocolate chips and crushed peppermint. You could use pistachios, almond slivers, walnut pieces, white chocolate bits, sugar-free candy bits, dried fruit bits…really anything you want.
This recipe was shared with me by a sweet friend almost a decade ago.

Auntie Terryl's Forgotten Cookies
Ingredients
- 2 egg whites
- 3/4 c sugar
- dash vanilla extract
- 3/4 c mix-ins
Instructions
- Preheat your oven to 350 degrees F
- Beat the egg whites to stiff peaks. Warning...this takes a while.
- Slowly mix in sugar and vanilla.
- Fold in mix-ins
- Dollop onto parchment paper lined baking sheets...about 2 T size.
- TURN OFF YOUR OVEN
- Stick them in the oven and forget them until the oven cools.
