Recipe of the Month: Loaded Rotisserie Chicken Nachos

Well, I did it again. I forgot to schedule today’s post in advance. I really should do all of these at one time at the beginning of the month. 😮

Anyway, here’s this month’s recipe, courtesy of BookWormMom. A big thanks to her for adding a little spice to our dinners and saving my behind several times this year with her timely posts.

Hello fellow readers.

There are days, and then there are days. Agreed?

Some days it is dinner time and the absolute last thing you want to do is feed people. At least, that is how some of my days go. However, my people get rather mean without food. I have a mini herd of people that need fed regularly. HA!😊

Sometimes a little help from the grocery store is what keeps me on the “right” side of the edge of insanity. I used to think I had to make everything from scratch…then life set in.

Rotisserie chicken is a miracle food in my book. Price wise, it is an affordable meat. I can turn that chicken into just about anything.

This is a TOTAL no cook (at home at least) meal. Even better, if you set it up buffet style, the herd can assemble their own food. Yes, I’m that tired sometimes. The only thing you have to do is shred the chicken, shred lettuce, and open a few bags/cans/jars. My grocery store has a Mojo style rotisserie chicken that I love, but just plain is fine too.

Loaded Rotisserie Chicken Nachos

Ingredients

  • 1 bag tortilla chips
  • 1 jar queso dip
  • 1 rotisserie chicken shredded
  • 1 head iceberg lettuce shredded
  • 1 bag frozen corn; or 1 can of corn thawed or drained
  • salsa optional
  • sour cream optional

Instructions

  • Setup a buffet and assemble your nachos as you like them.
