Once again, I was playing with my food. I have issues. I was watching yet another cooking show. This is the result of my cooking show addiction.
My brother-in-law harvested a slew of sweet potatoes from his garden. I inherited an entire large shopping bag filled with them. I figured playing with them might end up creating chicken food, but they were free. I was pleasantly surprised by the outcome.
These are GF and no sugar added.
Cheesy Sweet Potato Bites
1 ½ cups mashed sweet potatoes
½ teaspoon kosher salt
1 teaspoon onion powder
¼ teaspoon black pepper
1 cup shredded mozzarella cheese
2 eggs
- Preheat your oven to 350 degrees F.
- Mix everything together.
- Fill a greased mini-muffin dish with the mixture.
- Bake for 40 minutes.
- Cool to just above room temperature and serve.

Instructions

With Valentine’s Day approaching, I wanted to share my current fav low sugar treat. I love tea. My oldest daughter found a vanilla bean macaron tea. This would be where my food nerd obsession came in handy. See if you can follow my squirrel brain.
Macarons are made with Almond flour. I love macrons but am not supposed to eat sugar. I love almond milk. I had regular almond milk in the fridge for my daughter. Regular almond milk has 7 grams of sugar per cup. However, I needed just 2 tablespoons at 0.4375 grams of sugar each.
So….brew 12 ounces of hot water, steep 2 bags of the vanilla bean macaron tea for 2 min. Add in 2 tablespoons regular almond milk. Ta Da! A treat for less than 1 gram of sugar. Score one for Momma!
