Here’s another recipe from a dear reader, whom I’m going to start calling BookWormMom. 🙂
Hello my fellow bibliophile friends. There are tons of cake cookie recipes floating around out there. Cake cookies are not new. My 13 year old son came up with these combos and additions on his own, and I’m sharing with you what he made. This recipe is easy, quick, and yummy. They immediately reminded me of chocolate covered strawberries, which happen to be one of my favorite “go away, Mom needs a moment” treats. You know, those moments when you need to “eat your feelings” or go insane. Yes, I have those moments probably more than I should. Ha!
Cake Mix Cookies
One box strawberry cake mix
2 eggs
½ cup vegetable oil
1 ½ cup dark chocolate chips
Mix everything together. Stick it in the fridge for about 30 min. Make “balls” out of the dough. Bake on parchment paper lined (or greased) cookie sheets in a 350 degree F oven for 10-14 min depending on size. Cool on sheet. Makes about 24 medium sized cookies.
I will add that this is also one of those recipes that is more of a method than a simple recipe. Have fun and play with the following:
- Use any flavor cake mix you like.
- Instead of oil try melted butter or melted coconut oil.
- Use 1 ½ cup any chip or nut or dried fruit.
OTHER OPTIONS:
My kids like lemon cake mix with white chocolate chips and melted butter.
Yellow cake mix, melted butter, and milk chocolate chips is rather close to good ol’ chocolate chip cookies.
White cake mix, coconut oil, ½ c crushed macadamia nuts, ½ cup shredded coconut, and ½ dried pineapple bits makes Hawaiian style cookies.
The combos are as endless as your imagination.

Just like last month’s recipe, I plan to try this. Cake mixes go on sale a lot BOGO. Lots of options and ideas are flying through my head. I think my first try will be chocolate cake with chopped up maraschino cherries. 😮
