I’m not a big partier, so my New Year’s Eve was quiet and basically like any other Tuesday night. We had a normal poste-holiday dinner.
I’m not going to expound in excess about nothing, so here’s the recipe.

Turkey-Broccoli Casserole
Ingredients
- 1 pkg stuffing mix plus prep ingredients
- 1 can French fried onions 2.8 oz
- 1 can cream of mushroom or cream of chicken soup
- 1 pkg frozen broccoli, thawed and drained 10 oz
- 1 1/2-2 cup shredded cheddar cheese
- 1/2-3/4 Soup can milk
- 1/2 cup sour cream optional
- 2 cups cubed cooked turkey or chicken
Instructions
- Preheat oven to 350°.
- Prepare stuffing mix according to package instructions. Add 1/2 can of French fried onions.
- Spread stuffing in the bottom of a greased 9-inch round baking dish.
- Arrange broccoli spears over stuffing with flowerets around edge of dish.
- In a bowl stir cream of soup and milk until mixed. Add cheese, chopped turkey, sour cream (if used)
- Pour turkey mixture over broccoli stalks.
- Bake for 30 minutes.
- Sprinkle remaining onions over turkey. Bake for 5 minutes until onions are golden.
