Special Christmas recipe: A Tale of Two Cocoas

Hello Reader Friends! Happy Christmas!

There is nothing more comforting than a cup of hot cocoa to sip while you read a good book.

Yes. The packets are good.

Yes. We buy the Sam’s sized box to have on hand.

BUT…

There is nothing quite as yummy as homemade cocoa. It is a special treat.

I can’t have a lot of sugar anymore, but my kids can. Ha!

I call these two versions Naughty and Nice. The Naughty version is full on sugar. The Nice version has some sugar, but it is drastically reduced (7-10 grams per serving depending on the almond milk and chips you use).

 

The Naughty Cocoa

½ cup milk chocolate chips

2 cups whole milk

¼ tsp vanilla extract

Tiny pinch kosher salt

As much whipped cream as you want and a candy cane to garnish

Dump everything but the whipped cream and candy cane in a medium saucepan on low. Stand there and stir until everything is combined. It takes 10 min or so.

Serve in a mug topped with whipped cream and a candy cane.

The Nice Cocoa

1/4 cup low sugar chocolate chips (mine had 1 gram of sugar per Tablespoon)

2 cups almond milk

1/4 teaspoon vanilla extract

Tiny pinch kosher salt

As much sugar free whipped cream as you like

I was also making dinner and emptying the dishwasher (multi tasking), so I used my tiny crock pot.

Dump all the ingredient except whipped cream in the pot. Set it on high, and stir a bit every 10 min for an hour. I used a silicone spatula to scape and stir.

Serve in a mug topped with whipped cream.
